How to Make Delicious Turkish Chicken Beyti Kebab at Home
Turkish chicken beyti kebab is a mouthwatering dish that consists of minced chicken seasoned with spices and herbs, wrapped in thin bread, and topped with tomato sauce and garlicky yogurt. It is a popular dish in Turkish restaurants, but you can also make it at home with this easy recipe.
Beyti kebab is named after Beyti GÃler, the owner of a famous kebab restaurant in Istanbul, who created this dish in the 1960s. He was inspired by the traditional Urfa kebab, which is made with lamb or beef. He adapted it to use chicken and serve it with bread and sauces.
To make Turkish chicken beyti kebab, you will need the following ingredients:
500 g extra lean ground chicken
1/2 garlic shallots, finely chopped
1/4 cup parsley, finely chopped
1/4 cup fresh mint, finely chopped
1 tbsp red pepper paste, sweet
1 tsp red pepper paste (salca), hot
Salt and black pepper to taste
4 thin flatbreads, such as lavash, yufka, or tortilla
2 tbsp butter, melted
For the tomato sauce:
2 tbsp olive oil
3 garlic cloves, finely chopped
2 tbsp tomato paste
1 cup water
1 tsp red pepper flakes (pul biber)
Salt and sugar to taste
For the yogurt sauce:
2 cups plain yogurt
2 garlic cloves, finely chopped
Salt to taste
To make the chicken beyti kebab, follow these steps:
In a large bowl, combine the ground chicken, garlic shallots, parsley, mint, red pepper paste, salt, and pepper. Mix well with your hands until well combined.
Divide the mixture into 16 equal portions and shape them into long and thin sausages. You can wet your hands with some water and oil to prevent sticking.
Preheat the oven to 180ÂC (356ÂF) and line a baking sheet with parchment paper. Arrange the chicken sausages on the prepared baking sheet and bake for 20 minutes, turning halfway through.
In a small saucepan over medium heat, heat the olive oil and sautà the garlic for a few minutes until fragrant. Add the tomato paste, water, red pepper flakes, salt, and sugar and bring to a boil. Reduce the heat and simmer for 15 minutes until slightly thickened.
In a small bowl, whisk together the yogurt, garlic, and salt until smooth. Set aside.
Cut each flatbread into four equal pieces and brush them with melted butter on both sides. Place them on another baking sheet and bake for 10 minutes until crisp.
To serve, place four pieces of flatbread on a large platter. Cut each chicken sausage into four pieces and place them on top of the bread. Spoon some of the tomato sauce over the chicken and bread. Drizzle some of the yogurt sauce over everything. Garnish with some more parsley or mint if desired. Enjoy!
Turkish chicken beyti kebab is a satisfying and flavorful dish that can be enjoyed for lunch or dinner. It is also a great way to use up leftover chicken or bread. You can make the chicken mixture ahead of time and refrigerate it until ready to bake. You can also make the tomato and yogurt sauces in advance and reheat them before serving.
Beyti kebab is traditionally served with rice pilaf, grilled vegetables, salad, and pickles. You can also serve it with some lemon wedges to squeeze over the chicken for some extra tanginess. If you like spicy food, you can add more red pepper paste or flakes to the chicken or the tomato sauce.
